This weekend's tasting: Cheval Noir, from de l’Isle Île-aux-Grues, Quebec, steals the spotlight. A signature black-ash rind wraps this semi-firm delight that is rich, buttery, and nutty, with a hint of earthiness.
The stunning dark rind isn’t just for drama — it's edible vegetable ash that helps balance acidity, develop flavours, and protect the cheese during its natural aging.
Savour it with grainy mustard, toasted walnuts, and a drizzle of good honey. Or melt it into a fancy grilled cheese — add roasted onions and a swipe of apple butter between slices of warm baguette.
We’re also tasting Le Riopelle de l’Isle, a triple-cream masterpiece named after Quebec artist Jean-Paul Riopelle. A soft bloomy rind and a melt-in-your-mouth texture, best spread on warm baguette with a drizzle of honey. Yum!
