Weekday Burrata With Local Ontario Peaches
During one of our recent culinary events—How To Create A Charcuterie Board—a guest asked “What is the difference between imported Italian burrata and Ontario burrata?” Our Cheese Sommelier replied, “Think of Italian burrata as Sunday burrata, and Ontario burrata as weekday Burrata!”
Burrata is a fresh Italian cheese made from mozzarella and cream. It has a firm outer shell of mozzarella, and a cream-based center, giving it a velvety, soft texture. And there are so many ways to serve it, as a starter, on a pizza, in pasta, or simply drizzled with olive oil, sprinkled with sea salt, and grilled bread.
At this time of year, with fragrant local Ontario peaches in season, we created the perfect pairing: Grilled Peaches With Burrata, Arugula, And Balsamic Vinaigrette (recipe below). Inspired by the classic Caprese salad–reinvented with the sweetness of fresh Ontario peaches, creamy weekday burrata, peppery arugula and a kiss of balsamic. Easy to make and so delicious!

Grilled Peaches With Burrata, Arugula, And Balsamic Vinaigrette Recipe: 4 Ontario peaches, halved, Extra-virgin olive oil, for grilling, 250g Ontario's Bella Casara Burrata, 1 cup arugula.
Balsamic honey vinaigrette:1/4 cup extra-virgin olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon honey, Sea salt and freshly cracked pepper.
Preparation:
For vinaigrette, combine all ingredients in small jar with lid. Shake to combine. For peaches, preheat outdoor grill to medium to high heat. Drizzle with olive oil and place peaches cut side down on the skillet for about 1 minute or until slightly charred or grilled. To serve, arrange peaches with arugula and burrata on a serving platter, drizzle with vinaigrette just before serving.
Note: To get the best grill marks indoors use a grill skillet, if you don't have one, you can also use a cast iron or heavy skillet.
