This pie’s a Smart Cookie!
What’s Speculoos? Many of you asked, so here’s the scoop!
Speculoos is a spiced shortcrust biscuit originating in Belgium, made with warm spices like cinnamon, nutmeg, clove, ginger, and cardamom. Think of it as an elevated ginger snap with a rich, aromatic flavour.
Our chefs created a crust with crushed Graham wafers, warmly spiked with fresh ginger, to form the perfect base. The filling is made of Speculoos cookie butter—made from crushed Speculoos biscuits—blended with cream cheese, creating a silky texture. With hints of vanilla and a touch of sea salt, every bite is flavour-packed.
Hope you enjoyed our lesson on Speculoos and try our new Speculoos Cookie Butter Pie. It's best eaten chilled, so make sure to keep it in your fridge until serving. Enjoy!
