In The Best Tomato Sauce This Side Of Napoli (recipe below), we teach you how our DOP certified Summerhill San Marzano tomatoes and our premium cold pressed Summerhill extra-virgin olive oil come together and transform into a sauce so velvety and delicious you can almost taste Italy.

The Best Tomato Sauce This Side Of Napoli Recipe. 1/4 cup Summerhill's cold-pressed extra-virgin olive oil, 1 can (796 ml) whole San Marzano tomatoes, sea salt to season.

Note: it's important to use whole canned tomatoes rather than diced or crushed, as whole tomatoes have a more concentrated and robust flavour and squeezed through your hands (or break apart slightly with a spoon once in the pot) cook apart beautifully for a nicer appearance for styling your final dish. 

In medium saucepan or pot, warm olive oil over medium high heat; squeeze whole tomatoes through your hands and directly into the pot. Increase the heat to medium high and watch as the sauce reduce for 10-15 stirring occasionally. Once the sauce has reached a slightly thickened stage, season with sea salt to taste.

To make our beautiful Spaghetti With Tomato Sauce as above, cook spaghetti or linguini according to package direction to just before al dente stage; drain reserving a cup of pasta water, then add pasta and reserved water to the sauce and cook until pasta reaches al dente stage and sauce clings to pasta. Sprinkle with a good Parmigiano Reggiano and fresh basil.  

If you really wish to take this sauce to even another level, run the finished sauce through a mill to get the seeds out.
