Make the Most Beautiful Roasted Salmon


A beautiful side of salmon is one of our favourite ways to feed a table. It feels special, feeds a crowd and, best of all, requires very little work.

Our Brown Sugar and Citrus Roasted Salmon (recipe below) gets its incredible flavour from a simple combination of brown sugar, fresh lemon juice and extra-virgin olive oil. The brown sugar adds just enough sweetness to balance the richness of the salmon, while fresh lemon keeps everything bright.

But what really makes this dish beautiful is the citrus.

Thin slices of lemon, lime and mandarin orange are layered alongside the salmon with red onion before everything goes into the oven. As the salmon gently roasts, the citrus softens and the brown sugar mixture creates a delicious sweet-tart glaze.

To serve, layer salmon with more fresh citrus and fresh dill.

Beautiful enough for entertaining. Easy enough for Sunday dinner. And proof that roasting really is one of the simplest ways to make great salmon.


Brown Sugar and Citrus Roasted Salmon Recipe

Ingredients
1 (2–3 pound) Summerhill’s Atlantic Salmon, Half Side
Sea salt and freshly ground pepper, to season
1/4 cup packed brown sugar
1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
2 lemons, thinly sliced
2 limes, thinly sliced
2 mandarin oranges, thinly sliced
½ red onion, thinly sliced
Fresh dill, to serve

Preparation
Preheat oven to 350°F. Place salmon, skin side down, on parchment-lined baking sheet. Season with salt and pepper.

In a small bowl, combine brown sugar, lemon juice and olive oil. Brush mixture over fish. Layer sides of salmon with citrus and red onion slices. Bake 20 to 25 minutes or until salmon flakes when tested with fork. To serve, garnish generously with fresh dill.



Herb Crusted Rack Of Lamb

2 racks of lamb, room temperature
Extra-virgin olive oil
Sea salt and cracked black pepper
1 cup flat leaf parsley
1 tablespoon rosemary
1 tablespoon thyme
3 garlic cloves
1 cup white bread crumbs
4 tablespoons butter
2 teaspoons lemon zest

Combine herbs, garlic, breadcrumbs, butter and lemon zest in food processor until finely ground. 

Preheat oven to 450°. Place lamb in large roasting pan fat side up. Rub with olive oil and sprinkle with salt and pepper. Roast for 10 minutes. Remove from oven and press herb mixture onto lamb; return to oven for another 20 minutes. Remove from oven, cover with foil and allow to rest for 15 minutes before slicing and serving.
