French fry perfection, and the 3 second rule


Everybody loves french fries. There’s nothing like a perfectly salted crispy outside and velvety fluffy inside. Yum!

When it came to creating our own Summerhill Market Thin Cut Fries, we were aiming for the very best, sourcing Ontario Russet potatoes (the gold standard for making crispy fries) then cutting them thinly, soaking in cold water, and blanching them quickly for a pre-crisp the customer can finish up at home. The end result: perfectly thin, golden fries that stay crisp outside while offering a comfortingly light, fluffy interior. French fry perfection!

And the best part? These beauties come to life at home in an air-fryer in no time at all. As soon as they’re ready, place them in a large bowl and toss them with sea salt (season quickly as you have less than 3 seconds after cooking time to get the salt to adhere to the fry).

Here, we’ve added fresh thyme, freshly grated Parmesan, and our own Aioli, but simple ketchup will do. Good enough to serve with steak frites, or roast chicken, or simply on their own with little cups of your favourite condiments.
