Time for a spaghetti up-do!
This time-honoured recipe was inspired by an authentic old-school Italian restaurant we visited many years ago. The dish was so good, we just couldn’t stop thinking about it. So, we took it to the Summerhill test kitchen!

Best-quality spaghetti cooked to that just-right al dente bite—you don’t have to throw it against the wall to see if it sticks, we did that!
Fresh layers of flavour mean bright lemon juice and zest, perfectly marinated eggplant for a little earthiness, creamy best-quality feta, and a topping of shrimp roasted in garlic and butter. It's chef’s-kiss crazy delicious!
