Authentic Indian comfort food in the comfort of home

This week's Spinach Tofu Curry with Pulao Rice dinner feature is Indian comfort food at its finest.

As good as the best restaurant take-out, our take-home dish is super fresh, lightly spiced, and delicious. And when warmed, it smells so good!

Tofu takes the place of paneer in this lighter version of saag paneer, a classic Indian dish made with fresh spinach sautéed in a medley of fragrant spices.

We stir in seared tofu and coconut milk at the end for a creamy, satisfying, vegan meal that’s wonderful with our Pulao Rice (think rice pilaf cooked with spices). Enjoy it on its own, with warmed naan, or a touch of chutney (we like our Mango Chutney made by Stonewall Kitchen).

And with lighter tastes in mind, our new Spring Parsley & Potato Soup (below) is a must-try. Green and fresh, it’s presented in a 1- liter jar, is easy to heat, and is lovely with our Crostini and a dollop of sour cream. Enjoy!
