It was inspired by a Mexican beachside treat one of our cooks tried years back and couldn’t stop thinking about. They’ve recreated it with a rich, cheesy jalapeño chipotle dip. It’s amazing and pairs beautifully with the sweet shrimp and smoky, salty bacon.
Technically it’s an appetizer, but it’s perfect as a meal on its own, any night of the week.
You can bump it up with a spritz of fresh lime and some chopped cilantro or just heat, serve and savour with dip on the side. Enjoy!
