Summerhill Takes on Southern Barbecue

After months of experimenting and mastering the comfort flavours from the South, we are finally ready to launch our exciting selection of southern-style barbecue meats and side dishes, just in time for Father’s Day!

With summer coming in hot and Father’s Day fast approaching, it’s the perfect time to bring some iconic southern barbecue dishes to your next outdoor feast! 

Southern barbecue is a staple cuisine most famously developed in America and celebrates the warm weather in full swing. This cooking technique, which dates back to the Caribbean in the 1500s, involves slow-cooking different cuts of meat, in various marinades and seasonings. However, in the South, barbecue is more than just a style of cooking, it’s a whole subculture with wide variation between regions. 

This smokey form of culinary art, that is Southern barbecue, takes years to master. We at Summerhill Market were fortunate enough to learn about it from Nick Chen-Yin, former owner and pitmaster at Smoke Signals Bar-B-Q restaurant. His expertise came from his travels through the South and fully immersing himself in America’s southern barbecue culture. Nick was excited to bring these techniques back to Toronto to open up his restaurant, Smoke Signals, in Little Portugal. However, after great success, he decided to close it down in 2018 to pursue other projects (recently launched a free open-source recipe cookbook).

Our successful collaboration with Smoke Signals in June of 2018 made it clear that Southern barbecue was something that our Summerhill customers would love! That is why we got in touch with Nick Chen-Yin to teach our culinary team the secret nuances of this fantastic cuisine.

So, after months of experimenting and mastering the comfort flavours from the South, we are finally ready to launch our exciting selection of southern-style barbecue meats and side dishes, just in time for Father’s Day!
