Whole Beef Tenderloin – Serves 8-10
AAA Ontario Angus beef tenderloin seasoned and seared with a port shallot reduction. Serves 8-10.
Tenderloin is packaged in foil containers. Port shallot reduction is packaged on the side.
Bring to room temperature by removing from the fridge 40 minutes before cooking. Place in roasting pan or oven proof skillet, sprinkle with coarse salt. Preheat oven to 375 F, turn occasionally until internal temperature reaches:
Rare -125 F
Medium Rare - 135 F
Medium - 145 F
Allow beef to rest for 10-15 minutes before slicing.
